Sadly the answer is no. The only thing you can do is select your character and rename them. You are not able to change the character's gender or appearance whatsoever. There is no transmogrify option in the game like in Diablo 3.
Your look is strictly connected to the class you are playing as. All characters are locked into the initial genders they have on the character selection screen.

For many players, changing the way you look in a game is an important aspect that allows you to immerse yourself into the world created by developers. Unfortunately, you will not be able to do that in Diablo 2 Resurrected at this moment. There is a slim chance that the developers will add that feature to the game in a future update, but I would not count on it.
Make sure to try out different characters and find the one that fits your playstyle and visual style the most. Do not hesitate to create multiple characters just to see how they look in-game.
