It's a well-known fact that happiness was important for villagers in the Middle Ages. Nobles did everything they could to make their subjects happy, and now you must do the same. If villagers' happiness is below 50%, new ones will stop coming to your town, and if it continues to fall, they'll even start to leave. Follow these instructions on how to easily reach 100% happiness in Manor Lords.
Build multiple Forager Huts
Foraging is the easiest way to have plenty of food, but it's useless in winter as there are no berries then. You still have spring, summer, and autumn to pick up enough berries, so make sure to have enough foragers to pick up and sell them on the market. When the winter comes, you can switch foragers to hunt wild animals for meat.
Build Hunter Camps across the region
Building a hunting camp allows you to hunt a finite number of animals, so don't overdo it. You must ensure there are enough animals on the hunting grounds to breed. While the woods are filled with animals during spring, summer, and autumn, they scatter during the winter.
To make sure you're getting meat even during the cold months, build Hunting camps around the map to disperse your hunt so animals can survive. I suggest you pass a Hunting grounds policy (click on the name of the city at the top of the screen) to get 50% faster breeding.

Importing food should be the last resort, as you don't want to spend your wealth on things you can easily make. But sometimes, you'll have no choice, especially if your food reserves are not high enough before the winter season. It's important to buy food products before your villagers are starving to avoid losing happiness points.
How to get enough fuel in Manor Lords
The best way to have enough fuel is to invest heavily in the woodcutting business by building at least two Woodcutter's lodges. For starters, build one Woodcutter's lodge so you can have enough firewood. After some time, you'll have to build a Forester's hut so you always have enough trees. I suggest you invest in Charcoal burning research so you can build a Charcoal kiln that produces two coal pieces from one firewood, doubling your fuel reserves.
