One of the most iconic lines in Sifu is when the protagonist tells the first boss that he had waited eight years to kill him. That line is said regardless of how old the protagonist looks.
Throughout the story, this is the case. There is no mention of the protagonist's age by the enemies or the fact that the boy they killed eight years ago is now an old man. Therefore, age has no bearing on the plot of Sifu.

A player's age only influences how much health they have and how much damage they can deal. A player's age decreases their health and increases their damage output. The only real effects of aging are damage, health, and the character's appearance.
It will not seem like years to anyone involved since it takes place over a day and a half. Even though aging is a great game dynamic, it doesn't mean that all players will become old after each level. As far as the game is concerned, you can get as old as you like, no one will notice.
