It may not look like it, but thanks to its 95 HP and 85 Defense, Quagsire can sit in front of plenty of physical threats and not worry about it. More often than not, Quagsire wants that Impish nature. Quagsire can get the Unaware ability, which makes it ignore opposing boosts. So, add that with Impish, and Quagsire can defend against things like Swords Dance Chien Pao and Dragon Dance Dragapult easily.
The Careful nature is particularly there for Quagsire if it's running a Curse set. Since Curse already boosts physical Defense, it's better for Quagsire to run a Special Defense nature, covering him against both types of Attacks.
