If you want to know what your options are before you start the game, here are all hairstyles in Once Human, as well as a guide on how to change hair after you have completed the starting character creator.

All hairstyles in Once Human character creator
There are two bodies you can choose from in the game: Type I and Type II. Both have their own hairstyles, though some overlap across body types. Each type has a total of 17 hairstyles you can choose from in Once Human.
Once you have selected a Body Type, you can't change it in the game later on. However, hairstyles can be changed later, so consider carefully which body type has more different hairstyles that you like. Body Type I Hairstyles in Once Human
Body Type I has shorter hairstyles, catering to a more traditionally masculine look, with a few longer hairstyles which you can opt for.
Body Type II Hairstyles
Body Type II hairstyles in Once Human can be considered more traditionally feminine, with a variety of longer styles and a few shorter looks that can be found for both bodies.
How to change hair in Once Human
In order to change hair in Once Human, after you have finished character creation, you need to craft a floor mirror at your base. The mirror requires log x20 and glass x10. Logs are easy to get anywhere around you, but you have to craft glass in a furnace.
Once you have the mirror, approach it and click the button to reshape. Again, keep in mind that you can't change the Body Type. However, you can change everything else, including your hairstyle.
During the original character creator, you will have a limited selection of basic colors for your overall hair, highlights, and gradients. However, if you have a mirror and a butterfly dye, you can unlock the RGB wheel and pick any color you want. Keep in mind that one butterfly is one use, so use it carefully.
