Not only is turning into a frog not fun, but needing to not turn into one because of a combat mission is even worse. You can protect yourself from Toad in two ways: dodging the attack (like Poliwag Punch, Toafrong Tune, or a Malboro breath attack) or equipping an accessory called a White Cape.
I’d argue that the attacks themselves are easy to dodge—just don’t get too close or avoid any bubbles and fog attacks coming your way. But if you want to get up close and hack the frogs for some stagger, equipping a character with White Cape is your best bet.

Where to find a White Cape in FF7 Rebirth
A White Cape can be won from the Gold Saucer’s six person bout The Befouled at the Musclehead Colosseum. This is the arena game in Battle Square. It unlocks right after Cait Sith joins your party.
If you didn’t know, six person bouts are challenges where you take six members of your party into a battle that consists of at least two rounds. They all get equal chances at the action, so it’s recommended that you build two balanced teams when you take them on.
When you've gotten your Gongaga chocobo, you can actually work towards transmuting the item as well, allowing you to have it on multiple party members.
Explore the region and scan all the lifespring crystals. Once you do, Chadley will point you towards an artifact site. One of the transmuters you unearth will give you access to the White Cape recipe.
