There are three different types of currency you can earn in Harry Potter: Quidditch Champions: Moonstones, Gold, and Winged Keys. However, Moonstone currency is arguably the most important as its primary purpose is to provide upgrades for your team's broomsticks.

Moonstones can be accrued as early as the game's Tutorial mode, as you start gaining experience from each learning stage that goes towards your Career and unlocking levels within the game's current Season. After you have full access to your Team and can start participating in different modes (e.g. Campaign, Multiplayer, Exhibition), you can truly start grinding for Moonstones and various other rewards.

Once you have a substantial amount of Moonstones acquired, go to your 'My Team' tab, choose one of your teammates, and select their 'Performance' option. This will bring you to a submenu where you can either upgrade their Skills (if you have points available) or their broomstick. Scroll over to 'Brooms', where you will see their currently equipped broomstick and its stats.

To upgrade the broomstick, select the 'Preview Upgrade' option right above the stats display (as seen above), which will pull up the 'Confirm Broom Upgrade' notification. It also shows you which stats will receive upgrades and by how much. You can also select 'Toggle Details' to see exactly which stats under the three main categories will get boosted.

Upon hitting 'Confirm Upgrade', your teammate's broomstick will receive the desired upgrade and increase by one level (seen right below the broomstick's name). I suggest spreading your Moonstone spending across as many of your teammates as possible. This way, your team stays well-balanced as your Career grows.

Moonstones are fundamentally earned by playing (and preferably winning) as many matches as possible in each of the game's different modes. If you prefer to play solo, the Campaign and Exhibition modes can provide plenty of opportunities for leveling and earning numerous rewards.

However, if you want to focus on something that specifically rewards Moonstones, completing Mastery Challenges is a reliable method. These can be viewed by scrolling over to the 'Challenges' tab from the Player Menu.

From the drop-down submenu on the left, go down to 'Career' Challenges, which will bring up four categories, including 'Mastery'. This requires you to effectively "master" each of the four types of positions in Quidditch by completing various tasks for them. Once you do, you'll receive a set amount of Moonstones as a reward.
