In the table below, you can find all Quest NPC locations in the Go Fishing Roblox experience, as well as the quests they give and the rewards you get for solving them. Note that you can claim only two quests at once, but you can and should save the necessary fish in your inventory until you clear all the NPCs.

Also, all quests in Go Fishing right now are non-repeatable, and turning them in won't even remove the required fish from your inventory (except for the Captain's quest). So, there is no real reason to keep the fish in your inventory after you solve the quests.
