Being able to choose your playable gender appeared in Assassin's Creed Odyssey, as at the start of the game, you could pick if you wanted to play as a Male or Female. This hasn't changed in Assassin's Creed Valhalla; in fact, it's become more streamlined than ever before.
Assassin's Creed Valhalla How to Change your Gender
To change your gender in Assassin's Creed Valhalla, you must first reach the point in the story where you are able to set sail for New England. Then after progression is made like every Assassin's Creed game, real-life events will occur when you're out of the Animus, and you'll have the choice of choosing which gender.
You have three options when picking Eivor's gender, you can play as a male or female, or you can let the Animus decide and choose for you. Letting the Animus pick for you means that your gender will be switched without any input from you at certain points in the game.
However, even after you've picked, it ultimately doesn't matter, as you can swap your gender at any time you wish. This does not alter the gameplay or the story in any way, shape, or form. The only thing that actually changes is the customizable options available for Eivor, as both male and female Eivor are able to change hairstyles and apply tattoos. Still, only the male Eivor can have a beard!
This is entirely optional; if you wish, you can stay as the gender you have picked and play the entire story of Assassin's Creed Valhalla without changing once. It's nice to be able to have that choice.
