A dog companion is one of things near the top of my wishlist for Kingdom Come: Deliverance 2, so it's fortunate game director Daniel Vávra has now confirmed it will be a feature in the medieval RPG sequel.
Asked about the animals featured in the footage shown so far, Vávra said in a Czech interview with V.O.X. TV you can expect a horse and dog companion and nothing more. Throw in a cat and that's all I need —some of us prefer the fairer species, you know? (We'll have to wait for a DLC to adopt a kitty cat, if it even happens then, sadly.)
As I said in my wishlist (linked above), it'd be neat to see pet features like perks and equipment added in Kingdom Come: Deliverance 2. This of course would be in addition to the previous command features, which let you send your pet out to find treasure or hunt animals (among other things), as well as the Obedience mechanic which encouraged you to care for it. But either way, it'll just be a great addition to the base game, making those lonesome roads less lonesome.

As for the horse companion, that's assumed, but of course welcome too. Kingdom Come: Deliverance had a fairly robust set of horse mechanics, including stables, equipment, stats, whistling, and so on (the whistling came in real handy for stealth characters). Perks are about the only thing I'd want to see added here (if that), but the main changes would be less janky and more effective mounted combat, and perhaps an expanded horse racing system (combine it with gambling for good measure, allowing you to bet on other horses or race your own).
