To run, start walking and tilt the left joystick even further. This toggles between walking and running. Running helps you move across the open world more quickly, and since the game does not feature a stamina system, it is a highly efficient way of moving from one location to another. This mechanic is not accessible at the very beginning of the game.

When should you avoid Running?

If you are attempting to sneak up on an unsuspecting Pokémon, it is wise to avoid running by barely tilting the left joystick, as well as crouching with B. This will reduce the Pokémon's awareness and allow you to move closer without being spotted. To increase your stealth, try hiding in bushes and patches of foliage. If you do run past Pokémon, you are likely to be spotted, and therefore caught in combat.
