Gold and Diamond are Hatch Mutations. They can appear when you open an egg, so there is nothing special to do except keep breaking eggs and carrying the animals home.
To improve your odds, break as many eggs as you can. A faster pickaxe means more eggs in less time. Each zone has pickaxes recommended for it, such as the Stone Pickaxe for the Forest and the Golden Pickaxe for the Desert.
TIP: Higher zones also have more valuable pets, so a Gold or Diamond mutation there is worth much more Cash. Stronger pets multiplied with a mutation is what you should try to get.
