You'll get several opportunities to unlock unique rewards while completing quests in Starfield. The Mercury space gear is one of my favorite unlockables, along with the Ambassador Pistol and the Mantis Armor. You can find it in the NASA facility on Earth during the Unearthed main quest.
Where to find Mercury Spacesuit in Starfield
Land near the NASA Launch Station on Earth and try to reach the elevator marked via the objective indicator. You can enter the launch station by climbing up the pipes next to the elevator shaft as I've shown in the second image. Use the stairs on the other side to reach the section above you. Once there, carefully walk on the pipes and reach the other side of the platform where the elevator is.
To start up the elevator, you'll first have to enter the room to the left. Thanks to the NASA Access Code you received earlier during the quest, you'll be able to unlock the door. Now, pick up an Emergency Power Cell from the floor and insert it into the Power Receptacle on the wall (third image). This will power up the elevator that you can then use to enter the NASA Launch Facility.

Once inside, open the door on the other side of the room (first image) and reach the next section of the facility. Before that, make sure to check the computer for files to update the objective of the quest. In the exhibition hall, you'll find several antiques on display, along with the Mercury Suit. However, you can get the spacesuit from the mannequin on the other side (third image).
Grab the Mercury Spacesuit, Mercury Space Helmet, and Mercury Pack to complete the space kit. I already had a better spacesuit, so I decided to give mine to my companion instead.
