In Phasmophobia, the Hunt is a phase when one of the Ghosts starts walking around the location in order to kill the player's character. The lights will be turned off, and the exit door will become locked.
One of the options is just to leave early. There is nothing that forces players not to leave before completing every objective. You will get to live another day, however, all the information you gather will be limited. Remember, you can leave the building before the Hunt begins, so one way of escaping it is pretty much avoiding the Hunt altogether.

After the Hunt officially starts, the first way to escape is to last long enough and not get caught. In order to do that you need to make sure to turn corners, and do not bump into any obstacles. It can be tricky at times, but if you last long enough and you hear your heartbeat pounding it is almost over.
Do not turn around and look for the ghost. Instead, move forward and turn corners smoothly until the Hunt phase ends.
The second way is to hide in a closet or a room. Once inside, close the door or hide behind some furniture. If you hide for an extended period of time, you might just survive the Hunt.
You can also throw other players under the bus. You can survive the Hunt if someone else gets caught. It might seem unfair, or downright cruel, but sometimes you must take drastic action. Additionally, you can block the hunting phase with a crucifix when the ghost is nearby.
