To get your stuff back after dismissing a pawn in Dragon's Dogma 2, check your storage box at the closest Inn. Your items should get transported back to the chest from your dismissed pawn's possession. This was confirmed by my colleague who's playing the game on PC, but it didn't work for me on PS5, which leads me to believe there's a bug in the game. As a preventive, you should always remove any items from a pawn's inventory before dismissing them just to be on the safe side.
