This list goes over all 16 Dungeons of Hinterberg interactable characters in Dungeons of Hinterberg. Any requirements for friending them, the gifts they like, and the perks they give you will be included with their information.
Albert
Social Stat Requirement: None

Albert is a professor studying the magic within Hinterberg who is also responsible for opening the Hinterberg Museum. You can meet him around the world a few times, but in Hinterberg you'll find him at the cafe. His perks all relate to your magical abilities, which fits his character well. Becoming greater friends with him allows you to introduce him more directly to the world of magic, which is exciting to watch. Take him into a dungeon in The Expedition quest and meet with him again to become Buddies.

Alex
Social Stat Requirement: None

Alex is one of the first characters to approach you directly, making her one of the easiest to befriend. Since the game naturally puts Alex in interactions with you, there isn't a lot that needs to be done. The hardest level to get to is Besties (level 4), but that will come naturally when you and Alex make up after a fight.

Dani is the youngest pro Slayer in Hinterberg. You will typically find them relaxing and looking at the lake. In a similar mindset, most of their rewards deal with health and relaxation. To fully upgrade your friendship with them, you'll need to meet them in Hinterwald to complete their I Love the Forest quest. Their final friendship reward is part of a four-piece armor-set obtained by befriending all four pro Slayers in Hinterberg.

Dog
Social Stat Requirement: None
Preferred Gifts: Does not take gifts.
To befriend the dog, you must meet him in front of Hannah's shop and take on the A Furry Pal quest (A1). When you speak with Alex next, she'll tell you that the strawberries can be found near the Ancient Tree dungeon in Hinterwald (A2). Walk or fast travel to that dungeon, then head to the back right corner (A3). You'll see a small ledge with netting in front of it (A4). Use Whirlwind to lift yourself onto the ledge (A5). Afterward, walk across the ledge to find the strawberries glowing on the back portion of it (A6). If you're struggling to find them, the image labeled A7 shows their location on the map. Take these back to Hinterberg and feed them to the dog on your next evening to befriend him.
When you travel to Hinterwald again, follow the signs past the Windmill to the Southern Forest. You'll find the dog sitting next to the Mushroom Islands sign (A8). Interact with him to get him to reveal the dungeon to you (A9). You may also find him roaming around other areas of the forest. Interact with him and he'll dig up chests containing Hinterbucks for you.

Gertrude
Social Stat Requirement: None
Preferred Gifts: Does not take gifts
Befriending Gertrude requires players to find her brooch and complete the Where is it...? quest first. I first saw her in front of the fountain on the day of the Onion Festival. Speaking with her gives you the quest and a pretty accurate location for the brooch, which will glow brightly on the ground by the canals (A1). The image labeled A2 shows the location of this brooch on the map.
Return the Brooch to Gertrude and accept her offer to go to the Inn to become her acquaintance (A3). After this, hang out with her two more times. On the second time, she'll mention that it's her last evening and ask you to spend time with her. Do so to level up the relationship and get her brooch.

Hannah

Alex introduces you to Hannah so that she can teach you about Attack Conduits. Attend the lesson to become acquainted with her. Her next lesson will come about just as easily, bringing you to a level 2 friendship with her. To progress to level 3, you'll need to speak with her to get the Can I Get an Autograph? quest and bring her signatures from Renaud, Sam, and Kai. Her final perk is given after hanging out with her a few more times. She will remain in front of her store, but will not have time to hang out with you.

Henning is a sculptor who moved into Hinterberg shortly before the Dungeons appeared. You can only speak with him when he is out in his yard. Like Gertrude, your first interaction with him will give you the initial perk. However, you'll have to visit him twice more and complete his Art Supplies quest to get the second.

Jae

Jae is a pro-slayer and DJ visiting Hinterberg to take on the dungeons. She is one of the four pro-Slayers in Hinterberg during the time period of Dungeons of Hinterberg. While she initially comes off a bit aloof and hard to talk to, she very quickly warms up to you and learns to place more importance on friends and connections. To fully befriend her, you'll need to get and complete her Can You Spot Jae? quest in Doberkogel. Her final friendship perk will be the leggings for a full set of powerful armor obtained by befriending all four Pro Slayers.

Julian

Julian is an industry man in Hinterberg that constantly butts heads with Hannah. All of his perks involve his store Gear and More, albeit it will take some time before you're able to evolve your friendship to level 2. You won't reach this level until more magical mishaps occur in Hinterberg later in the game. Once you do, though, you'll have limitless access to new gear.

Kai

Kai is one of several NPCs that require you to raise your stats before becoming friends with them. Once you reach 50 Amused points, Kai will give you the option of hanging out with him. All of his friendship perks relate to Attack Conduits, making him a great friendship to prioritize. This even includes giving you a special Attack Conduit at the third level of friendship with him.

Klaus

Klaus is the tour guide for beginner slayers that teaches you the basics of exploring dungeons. When he visits you to apologize for the first dungeon, speak with him to become acquainted with him. As you become closer he will help you clean goo-covered gear and purchase trash you find in the areas around Hinterberg. You'll most commonly find him inside and around the Tourist Information building.

Marina is a part-time worker spending her vacation working and slaying in Hinterberg. Players will naturally be introduced to Marina, making her another easy character to befriend. Her second perk is interesting because it changes your daily routine rather than being a one-and-done like all other friendship perks. To get from the second level to the third, you'll need to receive and complete her Let's Take a Hike quest. Afterward, you can relax with her at the campfire to maximize your friendship.

Preferred Gifts: Sleeping Mask, Toy Sword, Walkie Talkies
Renaud is a powerful Slayer who prefers to work alone. You can attempt to talk to him, but you'll have to get 80 Renown for him to respond. Your first interaction with him will consist of you proving your worth. In the later encounters, you'll help him realize that he doesn't have to go at everything alone. To fully become friends, you'll need to get his Renaud in the Snow quest and spend time with him on Kolmstein. His final perk will be a powerful sword that goes with the set of armor obtained by befriending Renaud and the three other pro Slayers in Hinterberg.

Samkele, or Sam, is a popular Slayer in Hinterberg. Once you've reached 40 Amused, you can hang out with him and his groupies at the pub. As you hang out with him, his relationship perks will help boost your magic. To reach higher levels of friendship with him, you'll need to get the Brünnelsumpf Blues quest from him and spend time with him in Brünnelsumpf. Afterward, you can meet with him again to learn about his future endeavors and get his final friendship perk, which completes the Pro Slayer armor set.

Thea is one of the teenagers born and raised in Hinterberg. She is often seen alongside her companion David. To reach the later stages of your friendship with her, you'll need to spend some time talking to her and David separately. Additionally, you'll need to explore Hinterland West in her Goo Pipe Mystery quest and enter the mysterious pipe with her to fully upgrade your friendship. Her first and third perks are particularly useful for all players.

Travis is a journalist visiting Hinterberg just for his job. The first level of friendship is easily acquired by talking to him in the Abandoned Mineshaft and meeting him again at the pub. To get to the next level, you'll need to bring him a dungeon photo to complete the Worth a Thousand Words quest and hang out with him more. To maximize the friendship, take Travis into a dungeon in the A First-Hand Account quest and meet him once more afterward.
