In short, you will need to buy ammo recipes from the Duke when you reached a certain point in the game, more will also unlock as you progress in the game.

You will also need to buy these ammo recipes with a currency called Lel, and gather materials from various sources in the game. That being said, the following is all of the ammo recipes you can buy in Resident Evil Village. 

Sniper Ammo Recipe

This recipe costs 4k in Duke's Emporium and will require the following materials to make

• One Chemical Fluid 
• One Rusted Scrap 
• Two Gunpowder 

Shotgun Ammo Recipe

This recipe costs 3k in Duke's Emporium and will require the following materials to make.

• One Chemical Fluid 
• Two Rusted Scrap 
• One Gunpowder

Handgun Ammo Recipe

This recipe is already learned when you start the game but will require the following materials to make. 

• Two Rusted Scrap
• Two Gunpowder

Explosive Rounds Ammo Recipe

This recipe costs 3k in Duke's Emporium and will require the following materials to make.

• One Herb
• One Metal Scrap
• One Gunpowder

Flash Rounds Recipe

This recipe costs 3k in Duke's Emporium and will require the following materials to make.

• One Herb
• One Rusted scrap
• One Chemical Fluid

Magnum Ammo Recipe

This recipe costs 10k in Duke's Emporium and will require the following materials to make.

• One Metal Scrap
• One Rusted Scrap
• Four Gunpowder

Rifle Ammo Recipe

This recipe costs 10k in Duke's Emporium and will require the following materials to make.

• One Metal Scrap
• One Herb
• Two Rusted Scrap

Rocket Ammo Recipe

This recipe costs 10k in Duke's Emporium and will require the following materials to make.

• One Metal Scrap
• One Herb
• Two Rusted Scrap

If you want to craft the recipes listed above, you will first need to unlock them by progressing to the point where you are killing three bosses for the merchant Duke.
