Unfortunately, you won’t find Giant Pumpkins in the wild or by searching for them through the typical gathering nodes. Instead, you will need to exchange Purple Scrips for them. These Purple Scrips can be earned by completing various crafting and gathering tasks including turning in Collectables or visiting the White Crafter’s Scrip Exchange or Purple Scrip Exchange vendors. It's a good idea to farm a good amount of these Scrips, as they are an important resource.
