To unlock your additional classes to equip, you'll need to complete the objective listed in the class description on the top left of the class menu. This will usually be reaching a specific area of the dungeon or reaching a high enough level on that particular character. Once the objective has been completed, you will be able to equip the class to the character.

Different classes for your characters mean a whole new style for them, including a fresh outfit and all new abilities to explore. If you're like me, you'll enjoy checking out their new outfits as well as their fresh set of skills. Some classes are even more powerful than their base class, so you'll want to try and work your way through unlocking them all.
