Sebastian Sallow's series of side quests in Hogwarts Legacy will test you. You'll have to decide for yourself what kind of magics you are willing to learn and use in pursuit of what you deem to be right. If you went through the questline and chose not to learn some or all of the curses, there is a way for you to learn them later. It's dependent on a decision you make at the end of the questline, though. Arguably, it's one of the few decisions that matter in the game. Here's how to learn Unforgivable Curses if you missed any in Hogwarts Legacy.
Can you learn Unforgivable curses (Crucio, Imperio, Avada Kedavra) later in Hogwarts Legacy?
You can, all three of them. However, you can only learn them later if you decide to vouch for Sebastian at the end of In the Shadow of Friendship, his final side quest. If you agree with Ominis that Sebastian should be punished for killing his uncle, he'll be expelled from Hogwarts and will be due to face a trial at The Ministry of Magic. You won't see him again for the remainder of the save file.

If you argue that Sebastian was only doing what he had to do and should be defended, Sebastian will remain at Hogwarts. You can find him anytime down in the Undercroft. At any point after completing In the Shadow of Friendship, you can return to the Undercroft and speak with Sebastian to learn any of the three Unforgivable Curses that you may have declined to learn earlier on in the questline. If you decide to expel Sebastian, this will no longer be an option for you.
